We moved into our home about six months ago and have fallen more and more in love with it each day! However, we are currently trying to come up with a solution for a challenge we’ve come across. When we moved in we decided against using one of the extra bedrooms as an office. We both have family that travels in from out of town and we wanted to make sure they’d have a place to stay when they visit. We figured we could just set up shop with our laptops at the kitchen island when needed. No big deal right? Those who know me well know my favorite place to be is in my kitchen, cooking or entertaining! It’s a place I can have fun, relieve stress, get creative and make memories with my family and friends. My kitchen is undoubtedly my happy place. This past weekend we had so much fun celebrating my birthday with family at our house. The menu was exactly what I wanted: pizza, wings, western salad, chocolate cake, my favorite pie (more to come on that), beer, wine, and cocktails. Did I mention wine? LOTS of wine. By Sunday our bodies were craving a healthy-ish meal to kick off our week on the right foot, which brings me to this recipe.
I can hardly believe Valentine’s Day is only a few weeks from now. Didn’t we just put Christmas decorations (and cookies) away?! My hubby and I don’t really celebrate Valentine’s as far as gifts or dates go. But, that doesn’t stop me from getting heart eyes over all the pinks and reds popping up this time of year. I know the old saying goes “when one door closes, another opens”…or something like that. But, I don’t think doors have to close or things have to be left behind for opportunities to be discovered. Sometimes, you just have to reach out and turn the knob to step into a new adventure. That’s exactly what I’m doing to start Welcome to Whitneyland. In the past, I made excuse after excuse to tell myself why not to start blogging. I thought I didn’t have time, no one would be interested in reading my posts, my content wouldn’t be polished enough or I wouldn’t even have content to being with, I was too late in the game…the list goes on. Finally (admittedly after several years), I’m ready to turn those thoughts around and have made the decision it’s time to take the plunge. So here I am, and it’s the BEST feeling!continue reading
